Crispy meatballs.  Best meatballs ever.
1 - 1½ pounds of ground pork
3 slices of wet (soaked in milk, water, or both) white italian style bread. (not the crusty kind)
Handful of fresh chopped parsley
2 eggs
Grated parmesan to taste (couple tablespoons or more)
Red pepper flakes
S/P
Some panko bread crumbs
Garlic powder
Fresh garlic
Preheat the oven to 350.
Combine above in a mixing bowl.  Roll out balls with wet hands.  (I use the milk/water mixture from the bread to dip)
Roll the balls in a mixture of panko, parmesan, garlic powder, s/p, red pepper flakes, and herbs de provence.
Fry the meatballs on each side in a pan with olive oil.
Then place the meatballs in a mini cupcake tin.
Once the cupcake tin is full put them in the oven for 10 minutes.
